Its been so nice having Viggo around all the time.
And we've all had so much fun.
Here are some highlights of our spring break.
We visited Longwood Gardens.
It was 85 degrees that day. It was a little strange looking at tulips in weather that felt nearly tropical. What happened to spring? We went from winter directly to summer.

I got the recipe out of a cookbook called The Sneaky Chef. It was so good, the kids loved it! Viggo suggested I double the recipe the next time I make it. Can you believe there's avocado in there?

I bought blue potatoes! I have only seen these in cookbooks but never in real life. It was exciting to find them at the farm. Let me know if you have any recipe suggestions for these things.
Spring break hasn't been all pony rides and May sunshine . . . today we brought Elin to the doctor; she has another ear infection. Svea just finishedher Rx of amoxicillin to take care of her tonsilitis/strep throat combo. And now we have ten more days to go with Elin on antibiotics. I feel like we have been drinking this stuff since early February. But if amoxicillin is the biggest annoyance in my life I suppose that's a good thing. We're so blessed to be able to easily treat these infections that are really quite minor.

All day in the hot weather walking around the gardens did Svea in.
Stay tuned for tomorrow - Viggo starts soccer! He's so exicted!
What a nice Spring Break!
ReplyDeleteSo cute!! Viggo looks like a natural ball player (:
ReplyDeleteLooks like a great week with the kids! I sure hope Elin feels better soon...I feel for her, really! Can I get the breakfast ice cream recipe? I can think of a couple boys at my house who would be excited if this showed up on the breakfast table!
